Volpe Italian Pilsner is a vibrant old world Pilsner with a zesty depth that comes from a generous dry-hopping of Spalter Select, Hallertau Mittelfrüh and Saphir.  Initially clean, crystalline and herbal, Volpe’s palate gives way to lovely floral and citrus notes matched to a malt backbone of golden honeyed hay and bread crust.  Lingering aromas of lemongrass and a hoppy fresh afterglow make Vople a beautifully dynamic Pilsner.

Hypnose was developed as a celebration of noble hop refinement and Old World malt and yeast culture.  Lush and assertively hopped and dry hopped with Styrian Goldings (Celia), East Kent Goldings and Bramling Cross - layers of herbal dynamism reveal spicy notes of blackcurrant, lemon zest, spring botanicals.  Subtle floral and stone fruit esters match a superb balance of malt character and a crisp snappy bitterness.  The resulting pint is one full of depth, complexity and refreshment. ​

G.B. (formerly Ghost Beer) is a 'hybrid' pale ale made to suit both our English and West Coast sensibilities.  Brewed with a variety of US and UK malts and hops. Ketzer Lager is a Franconian inspired Helles, a style that has long been close to our hearts. Striving to reflect the pure balance, nuance, and quality found in this traditional style, Ketzer is brewed with German Pilsner malt, just a kiss of Vienna and Light Munich and hopped with selected Perle, Hallertau Mittelfrüh, and Saphir hops.  A gentle biscuit malt character and a noble floral, spicy hop aroma prevails with notes of wildflower honey, citrus zest, alpine herbs and a hint of peppercorn.  To ensure that classic mouthfeel and expressive mineralty, Ketzer is unfiltered and naturally carbonated, leaving nothing but joy.

Optant is a Pilsner lovingly inspired from our brewer’s ancestral homeland, Metz in the heart of French Alsace.   The name references those who kept French citizenship following the Franco-Prussian war.   For this Pilsner, luckily we have a little from both sides of the divide:  Heirloom German malt, and glorious French Alsatian hops.   Bracingly crisp with delicate minerality and a touch of bitterness.  Lively exquisite herbal and citrus aromas linger in this classic and effervescent continental Pils.

Orakel Landbier is a crisp, country style lager that finds inspiration in heirloom Bavarian malts and the history of brewing with ancient grains.  Made primarily with Isaria, the oldest native German barley variety &small amounts of Bavarian spelt and buckwheat add a delicate nutty and pastoral charm.  Hopped with Northern Brewer, Perle and Hallertau Mittelfrüh, Orakel provides gentle notes of orange oils, pinewood and treacle on the way to lush and balanced mouthfeel that refreshes and restores.

Mantic Kölsch is the perfect vehicle for Dutchess Ales to express our love of German traditional brewing culture and balanced, clean Ale all in one delicious package. Brewed with a decoction mash of Pilsner Malt, a kiss of Wheat and Munich malts and cold fermented with a centuries old Köln based yeast strain. Hopped with Perle and Hallertau Tradition. Vale Pale Ale is a Fall seasonal Pale Ale with a rich golden hue and a spectrum of lush hop and malt expressions.  Brewed with a base of Marris Otter and Pilsner Malt and notable accents of Munich, Spelt, Wheat and Oats and generously hopped with Azacca, Ekuanot, and Galaxy - Complex layers of the whole fruit basket emerge from juicy Peach, Guava and Mango to ethereal Papaya and Passionfruit on the finish.  Married with clean woodsy notes of evergreens and a crisp backbone of bitterness.

Halcyon Pale Ale began as an ode to our favorite modern Belgian pales reinterpreted through Dutchess’ own English-American lens.  Crisp, dry, and bursting with lively noble hops - all held together with a firm classic bitterness that stirs the palate and refreshes the senses.   Brewed with the finest Flemish summer barley, with generous Chinook, Styrian Golding, Saphir hops selected for their distinct subtle aromas of evergreen, white grapefruit, lemongrass, and orchard blossoms.   Fermented cold with Dutchess’ house Lager strain, Halcyon is a clean, dynamic old world Pale Ale that makes a bold new impression.

Meltemi is a coastal Mediterranean inspired lager that delivers sublime refreshment without compromising depth, nuance and quality.   Brewed with a base of German Pilsner malt combined with a subtle blend of maize and jasmine rice, a delicacy of mouthfeel is achieved that is both expressive and unique.  Perle and Alsatian Strisselspalt hops give Meltemi lovely aromas of lemon thyme and spicy spring blossoms.  Yamas!

Pylon Pilsner lies comfortably between the Bavarian and Northern German expressions of this beloved style. A base of heirloom German Pilsner malt provides a lush, brioche-like malt character with Saphir, Saaz, and Spalt Select hops lending complex botanical and faintly resinous hop aromas of sage and pink peppercorn with delicate lime blossom and honey notes. Held in balance with with a classic firm Pilsner bitterness and a crystalline, snappy finish, Pylon is a loving addition to the noble Pils tradition.

Walser Alpine Lager owes its inspiration to the crisp mountain Lagers of the Swiss Appenzell.  Rich golden in color with a delicately balanced profile of German Pilsner malt, two varieties of Munich malt, and Spelt.  Hopped with choice Hersbrucker, Tettnanger & Hallertau Tradition - meadow herbs and subtle spicy floral elements marry fait notes of juniper and candied citrus.​
